2 cups fresh or frozen blueberries
1/2 cup water
1/2 tsp baking soda
2 1/2 cups almond meal
1/2 cup honey
1 tsp cinnamon power
1 tsp vanilla essence.
3 eggs
Heat oven to 325 F
In a small pan simmer the berries with water until the berries release their juice and the mixture has thickened slightly.
Combine th dry ingredients in a bowl.
Combine the wet ingredients in another bowl.
Add dry ingredients to the wet ones. MixA well.
Fill baking cups.
Bake for 25-30 minutes or until knife comes out clean.
